HOW IT’S MADE

We make the wine and then take it down to Calwise Distillery in Paso Robles where it is distilled 3 times. On the third distillation, we add the zest of 100 pounds of local Santa Lucia Highland’s lemons.

WHY PAPAHOEY?

Denis Hoey, owner and winemaker at Odonata Winery, has always been called “Papa Hoey” by his friends since high school. The name is in recognition of his fatherly caring attitude toward family, friends and colleagues, ensuring everyone is kept safe wherever they are. Denis shows the same care and concerns for his wines and now, his new venture in Spirits.
